The Department of Animal Production at the College of Agriculture, University of Kirkuk, organized a scientific field visit for its students to the Kirkuk Modern Slaughterhouse, accompanied by faculty members including Assistant Professor Dr. Adnan Shakour Ahmed Al-Bayrakhudri, Assistant Lecturer Ibrahim Adnan, Professor Dr. Qana’a Hussein Amin, and Assistant Professor Dr. Mohammed Sabah Bahaa Al-Din.
Dr. Adnan Shakour Ahmed, lecturer of the Meat Science (Theory) course, explained that the aim of the visit was to familiarize students with the integrated processes related to animal slaughter, starting from holding pens, through stunning and slaughtering, to skinning and cutting, and finally refrigeration in specialized cooling rooms.
He added that such visits enable students to observe every step of field operations while adhering to key health standards at each stage, ensuring precision in slaughtering to guarantee meat quality and safety, as well as understanding the importance of environmental conditions in preserving meat after slaughter.
